I have 6 large eggplant veggies I just got from our garden this morning. If you want some/all  let me know and you are welcome to have it! (A lot of people ask what you do with eggplant. I used our other eggplants to make Eggplant Parmesan--but there are multiple recipes using eggplant online too.) If you've never tried it here's a chance without paying $1.50 per eggplant at the grocery store (at least last time I looked that's how much each one was...)

mmm South Beach has a recipe where you put hamburger and the middle of the egg plant and some tomato sauce into the outer part (cut in halves and scooped out) of the egg plant and then you bake it with some Parmesan sprinkled on top. I love it, Chris isn't a huge fan though. :/ let me know if you want the recipe!
