pudding popsicles

We made this with the kids yesterday and it was fun! Both kids enjoyed scooping the pudding mix and the strawberry mix into the trays. It was one of those perfect recipes for young kids to help out with.

Also, I like that these popsicles have calcium and real fruit in them!

Strawberry and cream pudding pops

12 medium strawberries (almost 2 cups) washed, stemmed, and quartered
2 T. sugar to taste
1 small box instant vanilla pudding
6 oz. vanilla yogurt
1 C. milk

In a food processor or blender, combine the strawberries with 2 T. of sugar. Process until smooth. Set puree aside.

In a blender, combine pudding, yogurt and milk, and blend until combined. Layer the pudding mixture with the strawberry mixture in small paper cups or popsicle molds. Insert a wooden popsicle stick in the center of each cup and freeze until solid. Remove from cups and serve. Makes 10-20 pops, depending on cup size.

We used ice cube trays for super tiny pops, which worked out great with my 2-year-old who usually has 2/3 of her popcicle melt all over her arms and face while trying to eat one :). She could get through an entire one of these with minimal meltage mess :).
